Ingredients:
6oz semi sweet chocolate chips
1/3 coconut oil
1/3 cup coconut sugar you can use granulated sugar
2 eggs (room temp)
1 tsp vanilla extract
1 cup flour
1/2 cup coco powder
1/2 tsp salt
1 tsp baking soda
1 cup mini marshmallows/ or 6 halved large marshmallows
Extra: dish of granulated sugar to roll cookies in
Directions:
-Double boil the chocolate and coconut oil togeather, once smooth let cool for 15 minutes
-Whisk the coconut sugar, vanilla extract and eggs into the chocolate until well combined
-Sift in the flour, coco powder, baking soda and salt
-With a rubber spatula gently fold everything together
-Cover and let chill in fridge for at least one hour
-After chill, preheat oven to 350F and prep baking sheet with parchment paper or silicon mat
-Take about 2 tbs of dough and flatten into the palm of your hand, place marshmallow in the middle and fold the dough around
-Roll the dough in granulated sugar and flatten onto baking sheet, keep each cookie about 2 inches apart
-Bake for 7 minutes at 350F
-Eat while still hot and gooey
